Reading

Thank you to everyone who was able to come our learning outcome WW2 celebration day last Friday. We had a wonderful day and really enjoyed sharing our learning with you. 
 
The leek and potato soup was a real hit, we are so glad so many of you enjoyed it. Below you can find the recipes we used for both the items we made. 
 

Carrot Cookie Recipe

Carrot Cookies (makes 12)

1 tablespoon margarine (Earth Balance for vegans)
2 tablespoons of sugar
1 teaspoon of vanilla essence
6 tablespoons of self-raising flour (plain flour add 1/2 teaspoon of baking powder)
4 tablespoon of grated raw carrot
1 tablespoon of water

Method

  1. Cream the fat and the sugar together with the vanilla essence
  2. Mix in the grated carrot
  3. Fold in the flour adding water as it gets dry
  4. Drop spoonfuls onto a greased tray and press down a little
  5. Pre-heat oven to 200C
  6. Sprinkle tops of cookies with extra sugar
  7. Place in oven for 10- 15 minutes

 

Leek and Potato Soup Recipe

 4 medium-sized leeks

1/2 oz of fat or dripping

3 medium-sized potatoes sliced
1-2 pints of vegetable stock
4 tablespoons of dried household milk
Chopped parsley
Salt and Pepper.

Method

  1. Cut the leeks in half long ways and after washing chop finely.
  2. Melt the fat in a saucepan and gently fry the leeks without browning, keeping the lid on.
  3. Add the potatoes and 3/4’s of the stock and cook until the potatoes are tender.
  4. Mix the powdered milk to a smooth paste with the remaining stock and add to the soup.
  5. Bring to the boil and sprinkle with chopped parsley just before serving.
